National Salad Month

May is National Salad Month. In honour of that, I am going to give you lot of different type of lettuces, dressings, and things to put on your salad. So, first I will tell you a little about greens and what are good in salads.

Salads are one of the most-healthful foods you can eat. Fresh greens are full of nutrients that have been known to give you energy, fight off disease and help you maintain a healthy weight! Salads are truly one of God's best foods.


The best-tasting salads start with fresh lettuce that come right out of your own garden. Lettuce is easy to grow, and since it is a cool weather plant, you can plant it in early Spring. It's grows best in a cool weather area. You can also plant it in ealry Fall for late lettuces. A salad garden is simple to grow, and very satisfying if you don't have enough room outside or are just growing an indoor salad garden. Some different kinds you might try are:

Buttercos
Butterhead
Crisphead and Iceburg
Looseleaf
Romaine (Cos)

For a great salad, mix a bunch of different kinds of salad greens, including dandelion greens, with some spinach, and you have a great salad! Also remember that the darker the leaf, the healthier and more packed with vitamins it is. We try to use darker greens instead of lighter ones, like iceburgs and crispheads.

There are so many different toppings you can use for your salads:
Croutons, tomatoes, onions, peas, carrot shreds, cheese, cottage cheese, sunflower seeds, cranberries, cucumbers, and bacon chips (you know the little pieces of bacon). You can also cook up some breaded chicken, add some spices, and put it on your salad. Does anyone have anymore toppings they like to put on their salads?

Some Dressings You Can Make Yourself:

Italian Dressing
2 1/4 cups soy, corn, safflower or canola oil
3/4 cup lemon juice
1 1/2 tsps. salt
1 1/2 tsps. garlic powder
1 1/2 tbsps. onion powder
1 tbsp. basil
2 tsps. dried parsley

Blend first 5 ingredients on high for 1-2 minutes. Pour into small bowl and stir in basil and parley. Chill. About 3 cups.

Easy Thousand Island Dressing
1 cup mayonnaise
1 tbsp minced onion
1/4 tsp. red pepper (scant)
2 tbsps. pickle relish
1/3 cup ketchup
Mix together until well blended. Makes 1 1/2 cups.


French Dressing
1 cup soy, corn, safflower or canola oil
1/3 cup lemon juice
1/3 cup honey
1 tbsp. paprika
3/4 cup tomato puree
1 tbsp. onion powder
1/2 tsp. garlic powder
1 1/2 tsps. salt.

Blend all ingredients on high for 30 seconds. Chill in covered container. About 2 1/3 cups.


We like using Ranch Dressing and Olive Oil and Vinegar. You can mix some garlic and spices in with the olive oil and vinegar dressing. It kind of makes a vinegarette. Check with your parents to see if it's o.k. for you to look online for some more dressing recipes, or look in a favorite cookbook. You can also try mixing two together and make your own.
